How to Make Beefy Potato Taco Casserole in a Slow Cooker

This casserole is meat and potatoes meets taco night. The combination is absolutely delicious! I shared some with our neighbors to rave reviews! If you wanted to make this super simple to throw together, do your prep work ahead of time. Peel and slice your potatoes, then put your slices in a bowl and cover with water. Brown and drain your ground beef ahead of time too, and you can throw this one together in a hurry! It is so good! You are going to love it!

Ingredients

  • 1 lb ground beef
  • 2 cloves garlic minced
  • 1 oz packet taco seasoning
  • 10.5 oz cheddar cheese soup
  • 4 cups potatoes sliced
  • 2 cups shredded cheddar cheese
  • 1 cup beef broth

Instructions

  • Brown your ground beef with garlic and drain
  • Place your potato slices in the bottom of a slightly greased 6-quart crock pot
  • Spread your ground beef evenly on top of your potatoes
  • Sprinkle your taco seasoning on top of everything
  • Spoon your soup evenly on top
  • Sprinkle your cheese evenly across the top of the everything
  • Gently pour your beef broth evenly around your crock pot
  • Cover and cook on low for 4-5 hours or high for 2-2.5 hours
  • If desired and using a oven safe crock, place in broiler on high for approximately 90 seconds to brown cheese on top
  • Let it cool for 10-15 minutes before serving

    Made this today! Family loved it! I added thinly sliced onions on top of the potato layer and added 1/2 a packet more taco seasoning. I’m one of those girls that every recipe has to have garlic AND onions! Lol. The fam loved it!! Thanks for sharing!!

    Tried this recipe tonight and really liked it. We did substitute Campbell’s Nacho Cheese soup instead of just cheddar soup. I think this would be really good adding some black beans in it as well. Thanks for sharing.

    Made this tonight, sorry not a fan. Taco seasoning didnt seem like the right stuff to use.

      I’m sorry this recipe wasn’t your cup of tea. We understand that, with almost 2,000 recipes, not every recipe is going to be liked by everyone. I hope you can find some you really love in our library of recipes.

    Very good! make sure to use Russet potatoes though. I’m pretty inexperienced in the kitchen and thought potatoes in general were pretty interchangeable and sued yellow potatoes. They did not soak up any flavor or anything so for the future make sure to use russets. Great recipe!

      I’m sorry this was not your favorite, but thank you for saying it nicely. We completely understand that every recipe isn’t going to be everyone’s cup of tea, but do hope you can find a recipe you love in our almost 2,000 recipes!
