When I told Cris that I had been asked to bring cheesy potatoes to one of the SEVEN Christmases we have each year, but wanted to try something new, she laughed and said I had make just about every cheesy potato recipe out there! While I have made a few…Crock Pot Cheesy Potatoes, Crock Pot Cheesy Bacon Potatoes, Crock Pot Cheesy Scalloped Potatoes, Deliciously Cheesy Crock Pot Potatoes, Crock Pot Cheesy Ranch Potatoes….she underestimated my love for potatoes! 😉

Together we came up with the idea to add in some smoked sausage! We love smoked sausage in Cris’ mac ‘n cheese. So I thought I’d give it a try in these Crock Pot Cheesy Potatoes and Smoked Sausage. Can you say YUM?!

Crock Pot Cheesy Potatoes and Smoked Sausage Recipe

Ingredients for Crock Pot Cheesy Potatoes and Smoked Sausage

  • 10-12 potatoes, peeled and sliced
  • 1 onion, diced
  • 4 chicken bouillon cubes
  • 16 oz Velveeta, cubed
  • 1 lb smoked sausage, sliced
  • salt and pepper to taste
  • 1 cup milk

How to Make Crock Pot Cheesy Potatoes and Smoked Sausage

  1. Fill a large pot with water, place on your stovetop and bring to a boil
  2. Throw in your bouillon cubes, potatoes and onion
  3. Boil for approximately 10 minutes, until potatoes are fork tender, and drain (Be sure to not leave them on too long if you want your potatoes to stay in nice big slices.)
  4. Pour your potato and onion mixture into your 6-quart crock pot (I used my Colts 6-quart Cook and Carry)
  5. Top with your cubed cheese and sliced sausage
  6. Salt and pepper to taste
  7. Pour your milk over everything, stir gently
  8. Cover and cook on low for 2 hours or high for 1 hour
  9. Stir gently before serving

Crock Pot Cheesy Potatoes and Smoked Sausage Notes:

  • If you want your potatoes to stay in bigger pieces, you can either pay better attention to them when you are boiling them than I did (I may have left them on a bit too long so they broke apart more than they should have, but they still tasted great!) or you can make your potato slices thicker if you have short attention span like yours truly!
  • If you like super cheesy potatoes, feel free to use a little extra cheese. IMHO, there is no such thing as too much cheese!
  • This feeds a crowd, so if you need fewer servings, feel free to cut this recipe in half and use a smaller crock pot.

These Crock Pot Cheesy Potatoes and Smoked Sausage are loosely based off of two of our favorite recipes, Crock Pot Cheesy Potatoes and Crock Pot Smoked Sausage Mac 'n Cheese and are sure to be a family favorite!
