Are you looking for a great new soup for your slow cooker? We love this Olive Garden Pasta Fagioli Crock Pot Copycat recipe. Sausage, beans, basil and pasta make for a flavor-filled bowl every time!
If you can’t tell we have been in an Olive Garden Copycat Recipes these days! So when we saw a recipe for Pasta Fagioli in Gooseberry Patch’s Slow Cooker Fall Favorites we knew it was next up in the crock pot since we had such a success with one of our other favorites.
Olive Garden Pasta Fagioli {Crock Pot Copycat}
This recipe is a little different from Olive Garden’s because it is missing celery and it has only white beans– not white and red. So, if you want a true copycat, you can just add those two ingredients. We stuck with the original recipe in the cookbook, except we added sausage and we LOVED it. All of the leftovers were gone by the next day!
One note: We LOVE this with fresh mozzarella. If you don’t have fresh mozzarella, I would recommend shredding a block of mozzarella in your food processor over using shredded mozzarella (although that is fine too). We like the freshly shredded stuff because it is so melty and perfect in this soup.
Ingredients
- 1 lb sausage
- 29 oz Italian style diced tomatoes (2-14 1/2oz cans)
- 30 oz cannellini beans (2-15oz cans) drained and rinsed
- 2 cloves of garlic diced
- 1/2 cup fresh basil chopped
- 2 Tablespoons Italian seasoning
- 1 1/2 teaspoons salt
- 1 teaspoon pepper
- 64 oz chicken or vegetable broth (2-32 oz containers)
- 16 oz pkg of ditalini pasta cooked
- Garnish: thinly slice mozzarella cheese
Instructions
- Brown sausage and drain.
- Add remaining ingredients except pasta, cover and cook on low for 6 hours
- Place a serving of pasta in each bowl and pour soup over top.
- Sprinkle mozzarella over soup and pasta.
Slow Cooker Recommendations
By now, most of you know that I am in big-time love with my new all-in-one slow cooker that has a browning setting to allow you to brown your sausage (and cook up your onion and bacon) IN the crock pot. I think my other slow cookers are going to get jealous! It works perfect for this soup and I LOVE how easy the non-stick surface cleans up! However, this soup will do well in any 5-6 qt slow cooker.
