[…] Aunt Lou here. Whether you have company coming over, or you just want to have a hot breakfast in the morning without having to cook it in the morning, this Crock Pot Peaches and Cream Overnight Oatmeal recipe is a great solution! Since peaches are not in season around here, I thought I would try this recipe with frozen peach slices. That way everyone can enjoy this delicious and comforting breakfast whether fresh peaches are available in your area or not! When you are putting water in your insert, on the outside of the bowl that is sitting in the insert, you will want to make sure that you do not fill the insert up more than halfway up the side of the bowl. There is a reason for this. If you put too much water in your insert, then there is a chance that the water will boil up and spill into your bowl, and no one wants that! (If you would like to try this recipe with fresh peaches instead of frozen peach slices, you can find that version of this recipe here.) […]

Oatmeal freezes well, so consider it meal prep! If you don't want to do that then you can perhaps make less servings in a small rice cooker or just the old fashioned way on the stove top

I used my large 6 cup glass measuring cup for this! Had I not thought to use that, I was going to mix everything in a bowl and even divide amongst a few glass jars for the same technique. Could be a nice grab and go option!
Hi George-
As I mentioned in the post, the leftovers from this dish are fantastic reheated for a hot breakfast throughout the week.

Slow cookers cook best when two thirds full and really shouldn't be less than half full so, unfortunately I doubt we will be offering 1-2 serving options anytime soon. You might try googling for sites that offer those kinds of options to better fit your needs. Good luck - C

What's a single man to do? Cook this dish for 6? How about helping us too!! Add a scaled down version for 1-2 people so most of the world (those that do't need 6-7 servings) can enjoy your dishes also.

THANKS!!
