Crock Pot Loaded Broccoli Cauliflower

Ingredients

  • 1 lb Frozen Broccoli and Cauliflower
  • 1 Cup Pimento Cheese Dip
  • 4 oz Cream Cheese,Cubed
  • 1 Cup Cheddar Cheese
  • Salt and Pepper
  • 8 Slices Bacon- Divided
  • Optional- 3 Green Onions,Chopped

Instructions

  • Combine all ingredients in a mini casserole crock or traditional 3-4 quart slow cooker, reserving some bacon for garnish.
  • Cover and cook on low 3-4 hours, stirring occasionally.
  • Top with bacon and serve.

Notes

  • We LOVE using our mini casserole crock for this dish!
  • We use our bacon pans to bake our bacon and get it nice and crispy. Bake at 400 for 25-30 minutes. Perfection.
  • Carb counts on this dish are HIGHLY dependent on the kind of pimento cheese dip you use. I use Palmetto brand (found in refrigerated section near cream cheese) which has 0 carbs per serving, but some brands are up to 7 carbs per serving. If you can't find a good low carb version, check out my friend Brandie's homemade version that you can make and control the carbs yourself ;).
