Are you looking for a delicious side dish that you can throw in your slow cooker for a special family dinner or holiday dish? Our Crock Pot Loaded Broccoli Cauliflower is a creamy, cheesy casserole that everyone loves and it just so happens to be low carb too!
1lbFrozen Broccoli and Cauliflower
1CupPimento Cheese Dip
4 ozCream Cheese,Cubed
Salt and Pepper
Optional- 3 Green Onions,Chopped
Combine all ingredients in a mini casserole crock or traditional 3-4 quart slow cooker, reserving some bacon for garnish.
Cover and cook on low 3-4 hours, stirring occasionally.
We use our bacon pans to bake our bacon and get it nice and crispy. Bake at 400 for 25-30 minutes. Perfection.
Carb counts on this dish are HIGHLY dependent on the kind of pimento cheese dip you use. I use Palmetto brand (found in refrigerated section near cream cheese) which has 0 carbs per serving, but some brands are up to 7 carbs per serving. If you can't find a good low carb version, check out my friend Brandie's homemade version that you can make and control the carbs yourself ;).
