This Creamy Crock Pot Escalloped Corn is easy to make and packed full of flavor! It would be a wonderful addition to your dinner table!

Ingredients

  • 2 tablespoons butter
  • 1/2 cup onion chopped
  • 3 tablespoons all-purpose flour
  • 1 cup milk
  • 4 cups frozen corn thawed, divided
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/8 teaspoon ground nutmeg

Instructions

  • Put 2 cups of your corn in a blender or food processor and chop coarsely
  • Melt your butter in a small pan over medium heat on the stove
  • Add in your onions and cook until they are tender (around 5 minutes or so)
  • Stir in your flour
  • Pour in your milk and stir continually while it comes to a boil and thickens
  • Mix together all of your ingredients in a crock pot
  • Cover and cook on low for 3.5-4 hours or high for 1.5-2 hours (When it is golden around the edges and hot and bubbly, it is done)
