Pour broth over top of the meatballs and add all remaining ingredients except spinach and garnish.
Cook on high for 2-3 hours or low for 4-6 hours.
Stir in spinach and serve in bowls topped with shredded Parmesan.

We use our Low Carb Air Fryer Meatballs to make this soup low carb. If you do not have an air fryer, you can still use this recipe and make the meatballs in a skillet (or browning slow cooker) until they are cooked through.
We use our 6 quart multicooker to make this recipe, but you can use any 6 quart slow cooker.
