Our Crock Pot Beefy Pepper Jack Casserole is an easy low carb ground beef casserole that the whole family loves! Layers of ground beef, mushrooms, peppers, green beans and creamy pepper jack cheese make this recipe a go-to for family dinner.
We have made this dish in our casserole crock and our 6 quart Ninja Multicooker. Both work great. The Ninja's non-stick surface makes for a little easier clean up.
All slow cookers cook differently, so cooking times are always a basic guideline. Recipes should always be tested first in your own slow cooker and time adjusted as needed.
If you do not want to use fresh mushrooms, you can substitute them for a 4 oz can of mushrooms (drained) or leave them out completely.
We prefer to use frozen whole green beans in this recipe. You could use frozen cut or canned (drained) if you would like.
