Add enough water in the insert (do not get any in your bowl with your eggs) to cover your potatoes (your bowl will rise up some)
Cover and cook for 1.5-2 hours on high, until your eggs are completely set
Remove the oven safe bowl and gently dump your eggs on a cutting board
Recover your crock pot and continue cooking on high for an additional 2-2.5 hours, until your potatoes are fork tender
Chop your eggs and place in your refrigerator to chill
Once your potatoes are cooked, drain and rinse in cold water to cool them down
Place all your ingredients in a large bowl and mix until well combined
Place back into your refrigerator for 30-45 minutes to chill
