In a large bowl, prepare your corn bread mixes per the instructions on the box.
Add your hot dog slices and 1/2 cup of shredded cheddar cheese to the prepared corn bread mix and stir until well combined.
Spread your mixture evenly across the bottom of a lightly greased casserole crock pot or 6 quart crock pot.
Sprinkle your remaining cheese evenly across the top of the casserole.
Put some paper towels or a thin tea towel tightly under your lid (to keep condensation from dripping onto your casserole). It is important that it is tight and not drooping in the center. You do not want it to touch the casserole.
Cover and cook on high for 90 minutes to 2 hours, turning your insert halfway through cooking if your crock pot doesn't cook evenly. (It is done when the center is set and the edges are golden.)
Notes
When baking in a crock pot, it is imperative to use a crock pot that you know does not cook too hot. If a slow cooker cooks too hot, it will burn the edges before the center finishes cooking.
