Slice your baby carrots and add them to your crock pot.
Put your chicken on top of your veggies.
Mix together the rest of your ingredients and pour over everything.
Cover and cook on low for 4-6 hours or high for 2-3 hours. If possible, flip your chicken thighs over halfway through cooking.
