Pour your olive oil in your 4 quart crock pot, spread all around and set aside.
Place your slices of steak, peppers and onions in a large bowl and set aside.
Mix together your remaining ingredients, except your tortillas, in a small bowl.
Sprinkle a third of your seasoning mixture over your steak, peppers and onions and gently toss. Repeat twice with about a third of your seasoning mixture each time until the seasoning is spread out evenly.
Pour your steak mixture into your slow cooker, cover and cook on low for 4-6 hours, until your steak is tender.
Serve on tortillas.
