Sprinkle your cubed chicken with garlic salt and pepper to taste in a large skillet that has been lightly sprayed with cooking spray over medium heat, make sure you do not overcook your chicken since it is going into your crock pot after this.
While your chicken is cooking, combine your stuffing mix and 1 cup of chicken broth in a bowl and set aside to let the stuffing mix absorb all the chicken broth.
Spread your cooked chicken cubes evenly across the bottom of a 6 quart slow cooker.
Pour your drained green beans evenly across the top of your layer of chicken.
Spoon your mashed potatoes across the top of the green beans and spread them out evenly.
Top your mashed potatoes with your stuffing mix.
Cover and cook on low for 2 hours, turning your insert halfway through cooking if your slow cooker does not cook evenly.
