Pour all your ingredients into a large pot over medium high heat, and stir.
Cover and cook for for 10-12 minutes, stirring occasionally, until it just comes to a boil.
Remove from heat and use an immersion blender to blend the soup to desired smoothness. (If you are using a non-stick pot, you will want to pour your soup into a large bowl before using the blender so you don't accidentally hurt your non-stick pot.)
