Cover a rimmed baking sheet with parchment paper, set aside.
Put your flour, garlic salt and pepper into a quart size baggie, close it and shake until all the ingredients are well combined, set aside.
Put your eggs in a shallow bowl and beat with a fork, set aside.
Mix together your Italian bread crumbs and panko bread crumbs in a separate shallow bowl, set aside.
Cut your mozzarella sticks in half and place 6 mozzarella sticks halves in your flour mixture, close the bag and shake until they are well coated.
Remove mozzarella sticks one at a time, tapping them against the inside of the bag to knock off excess flour.
One at a time, coat your mozzarella stick in the eggs and then the bread crumbs, pressing the bread crumbs onto the cheese stick, making sure to coat the ends as well as the sides.
Place coated mozzarella sticks on the parchment paper covered baking sheet and repeat the steps for the remaining mozzarella sticks.
Place the baking sheet in a freezer for 30 minutes.
One at a time, coat your mozzarella sticks in the eggs and then the bread crumbs, pressing the bread crumbs onto the mozzarella stick again and place the double coated mozzarella stick back on the parchment paper lined baking sheet.
Place the baking sheet in a freezer for at least 30 minutes.
Before removing your mozzarella sticks, preheat your air fryer at 390 degrees for 2 minutes. If you are using your Ninja Foodi, put your air crisp plate in the bottom of the insert.
Generously spray your air fryer and 8 cheese sticks with cooking spray and place them in your air fryer basket (on on the air crisp plate) and air fry for 5-7 minutes at 390. Watch your mozzarella sticks closely so you can stop your air fryer when they are at the desired goldenness and so your mozzarella doesn't ooze out everywhere if there is a weak spot in the batter.
Repeat cooking time for remaining mozzarella sticks in batches.
If you do not want to make all of them at once, you can freeze the uncooked mozzarella sticks in a freezer baggie, removing all the air, for up to 3 months.
