Take one loaf of French bread, cut it into cubes and place the bread cubes into an extra large bowl.
In a different bowl, beat eggs, vanilla, sugar (from casserole ingredients list) and cinnamon together before adding in your milk and stirring until well combined.
Pour your egg and milk mixture over your bread cubes and gently stir/toss until all your bread is well coated.
Spread your bread mixture out evenly in a lightly greased 9x13 baking dish, cover and place in your refrigerator for at least 4 hours or overnight.
Preheat your oven to 400 degrees Fahrenheit.
While your oven is preheating, mix together your softened cream cheese, egg, vanilla and sugar (from cream cheese topping ingredient list) until well blended.
Spoon your cream cheese mixture evenly across the top of your casserole using your stirring spatula to spread it out evenly, but not letting it touch the baking dish.
Bake at 400 for 25-30 minutes (mine was perfect at 28 minutes), turning your baking dish at 15 minutes if your oven does not cook evenly.
Serve hot as is or topped with pancake syrup, if desired.
