Crock Pot Pork Roast and Veggies

Ingredients

  • 2 Tablespoon Olive Oil
  • 1 4-6 lb Boneless Boston Butt Pork Roast
  • Garlic Salt, Pepper and Cajun Seasoning to Taste
  • 1/2 Cup Water
  • 3-6 Large Carrots Scraped and Cut into Chunks
  • 10 Small New Red Potatoes Cut into Quarters
  • 1 Stalk Celery Cut into Chunks
  • 2 10 3/4 oz Cans Cream of Mushroom Soup
  • 1/2 teaspoon dried thyme
  • 1 teaspoon dried sage

Instructions

  • Heat oil in a skillet (or stove top safe crock) and season roast with garlic, salt, pepper and cajun seasoning.
  • Brown roast in oil on all sides, then set aside on a nearby plate.
  • Pour water in skillet to lift all brown bits from pan.
  • Place veggies in the crock and pour juices on top.
  • Create a well in the center of the veggies then place roast fat side up in the center.
  • Pour soups on top of the roast and season with thyme and sage.
  • Cook on high for 6-8 hours or low for 8-10.

  • This recipe will do well in any 5-6 qt slow cooker.We liked using our all-in-one slow cooker that has a browning setting to allow you to brown your roast in the slow cooker instead of the stove top and then switch it to slow cooking setting.
