These chicken lettuce wraps are a quick and easy way to make a grilled chicken dinner and enjoy some fresh veggies! Instructions
Preheat grill on medium high heat
Season chicken thighs on both sides with favorite seasoning
Place thighs on grill for approximately 7 minutes per side (This will depend on your grill. Juices should run clear when meat is properly cooked to at least 165 degrees.)
Remove chicken and slice into strips
Slice up peppers longways
Slice cucumbers
Add a few strips of chicken, peppers and cucumber into a leaf of the butter crunch lettuce
Top with a little ranch dressing

This recipe is completely versatile. Feel free to add or subtract whatever you want to go along with the chicken. I'd bet shredded cheese would go great with this as well as some grilled onions and/or mushrooms!
