Prick your sweet potatoes with a fork and place in the bottom of your 6 quart electric pressure cooker.
Pour water on top and lock your lid.
Set your pressure cooker on manual (warming setting off) for 16 minutes (add a few minutes for really large potatoes) at high pressure.
Once done cooking, use quick release and remove from your electric pressure cooker immediately.
Top with toppings and serve.
My potatoes we pretty large-- but not the jumbo ones you sometimes find at the grocery store. If you are using really large sweet potatoes, you will want to increase your time.
I cooked these on the vegetable setting for 16 minutes and then used quick release. You can also cook on manual high pressure for 16 minutes with quick release. Regardless what you choose, turn off the warming setting and remove from heat immediately.
If you are using an 8-quart Instant Pot, you may need to use a half cup more liquid to make sure your Instant Pot will come up to pressure.
