Crock Pot Balsamic Roast is an easy recipe for beef roast that packs a flavorful punch. This is such a great slow cooker recipe that no one would ever guess was low carb too!
Salt and pepper your roast and then brown on each side in the bacon fat on the saute feature OR if your slow cooker doesn't have a saute feature, just brown in a skillet on the stove before transferring to your traditional 6 quart slow cooker.
In a bowl, mix together garlic, onion, sugar, vinegar and broth.
Pour mixture over your roast and top with the herbs.
Cook on low for 8-10 hours.
Remove herbs and serve roast with sauce.

We love using a multi-cooker to make this roast to make it a one-pot dish, however, you can use a traditional 6 quart slow cooker and just brown your roast in a skillet on the stove if you do not have a multi-cooker.
If you are counting carbs, make sure to compare labels on your balsamic vinegar. Carb counts vary wildly.
