To make this low-carb, we used CarbQuick. If you don't eat low carb you can use flour, if you prefer.
I like to split my breading into two gallon-sized baggies so that when I am ready, I can just take my chicken, roll it in some beaten eggs and toss in the bag to coat. After coating, I can just throw the bag away for easy clean up. By splitting the batches into two bags, I know I can do two different batches of fried chicken. I usually cook up around 12 legs at a time. If you like to cook less, just split into more than two bags.
