We LOVE this Crock Pot BBQ Cola Chicken! This smoky bbq is an amazing low carb main dish and is also great on salads and in sandwiches and wraps. And, it is freezer friendly!
Place Chicken in a 6 quart slow cooker and salt well.
In a bowl, mix together remaining ingredients and pour over top of chicken.
Cook on low for 4-6 hours or until chicken is shreddable.
Remove chicken from slow cooker and shred in a mixer OR with two forks.
If a thicker sauce is desired, cook juices at a simmer until sauce reduces to thickness desired.
Return chicken to sauce and stir well.
Notes
This recipe features our very favorite low carb bbq cola sauce we adapted from one of our favorite low carb cookbooks: Bacon and Butter.
If you are looking for other low carb recipes, you can find them all here.
We like to use boneless skinless thighs in this recipe. You can use chicken breasts, but they may cook a little faster.
We like to use our multicookers (like the Ninja) to use the saute feature to reduce the sauce at the end. However, if you are using a traditional 6 quart slow cooker, you can just heat your sauce in a sauce pan on the stove instead.
As with any of our recipes, carb counts, calorie counts and nutritional information varies greatly depending on which products you choose to use when cooking this dish.
All slow cookers cook differently, so cooking times are always a basic guideline and should always be tested first in your own slow cooker and time adjusted as needed.
