Our Low Carb Cauliflower Fried Rice is the perfect side to serve up with your favorite Asian inspired dishes. Savory riced cauliflower, broccoli, green onion and carrots with a great sesame flavor makes this dish a great way to get the kids to eat their veggies! Add some chicken, shrimp, steak or ham and make it into a meal!
Heat oil in a skillet (or on saute feature in a multicooker) over medium high heat
Add veggies and soy sauce and stir occasionally until they become slightly tender. Reduce heat to medium.
Push veggies to the sides of the pan to make an opening in the middle and add eggs.
Begin stirring eggs to scramble and work veggies back into eggs.
Taste and add additional soy sauce if desired.

We used a bagged riced cauliflower, broccoli, green onion and carrot mix found in our salad section at the grocery store for this recipe. You can use plain frozen riced cauliflower instead or you can finely chop up your own veggies for your dish. We have made it using both the fresh salad mix and the frozen plain riced cauliflower. Just toss it in frozen.
We prefer to make this dish with sesame oil, however, we have made it with other cooking oils in a pinch.
