Salt and pepper your roast and then brown on each side in the bacon fat in your 6-quart Instant Pot on saute
In a bowl, mix together garlic, onion, sugar, vinegar and broth.
Pour mixture over your roast and top with the herbs.
Seal and cook on manual high for 60 minutes
Natural release for 15 minutes, then quick release
Remove herbs and serve roast with sauce.
