Our Ninja Foodi Make Ahead Chicken is a great way to pressure cook, shred and store chicken for future meals. You can also make a delicious broth base and Air Fryer Chicken Cracklins from the leftovers! Low Carb too!
Place chicken in 6 or 6.5 quart Electric Pressure Cooker and add remaining ingredients.
Set lid to seal and cook under high pressure for 30 minutes.
Quick release pressure and carefully move chicken pieces into a bowl to remove skin (reserve for crackins if desired.) and chicken bone (discard). Shred meat.
Store in an air tight container with a little broth spooned over the top to use in sandwiches, salads, casseroles and soups.
Reserve remaining broth as a broth base for soups if desired.
In this recipe, we use bone-in thighs because we enjoy dark meat. You can try this recipe with other cuts of chicken, you may just need to adjust cooking times.
We cook this chicken under high pressure for 30 minutes because we want fall off the bone chicken that is super easy to shred. If you want your chicken to be less tender, reduce cooking times to 25 minutes.
We've tested this recipe in a 6 quart Instant Pot and 6.5 quart Ninja Foodi. When pressure cooking with larger pressure cookers, you may need to add 1/2 cup to 1 cup more liquid to reach pressure. Make sure not to overfill smaller pressure cookers past their max lines.
