Melt your sliced butter in a large skillet over medium high heat
Sauté your onions and garlic until translucent (just a few minutes)
Reduce heat to medium and stir in flour for approximately 1 minute
Add in your sour cream and milk, whisking continually until your sauce starts to thicken, about 5 minutes
Stir in your colby jack cheese and continue stirring until it is all well blended together
Put your prepared chicken and pasta in a large bowl and top with the sauce from the skillet and gently toss with two wooden spoons until all the chicken and pasta are well coated
Spread this mixture in a lightly greased casserole crock pot or 6 quart crock pot
Sprinkle mozzarella cheese on top
Cover and cook on low for 1.5-2 hours or high for 1 hour
