Crock Pot Spaghetti Casserole is an easy slow cooker meal with low carb options. Meaty sauce, tender noodles and cheesy layers create a flavor everyone loves!
Combine all the spaghetti layer ingredients and place inside your crock pot.
In a medium bowl, mix together ricotta layer ingredients and spread on top of spaghetti layer.
Cover evenly with the mozzarella cheese.
Cook on high for 2 hours or until the cheese melts and the edges are bubbly.

We have tested this recipe in both the Casserole Crock and a traditional 6 quart slow cooker. This recipe works well in both. I prefer the casserole crock for dividing into even portions.
It is best to undercook your spaghetti a little bit as it will continue to cook in the casserole. This will help the pasta retain its shape. Note it is VERY easy to overcook low carb spaghetti.
We use these tools to zest (Microplane ) and juice (Juicer) our lemon.
You can use any Italian seasoning you find at your grocery store. We have used this one and this pizza seasoning. Note that many seasonings contain pepper, so you may want to adjust how much you add depending on heat desired.
We used whole milk ricotta. We prefer it in this dish, but you can use your preferred ricotta.
