This Crock Pot Chicken Gnocchi Soup is delicious. It takes a little bit of prep time, but the results are completely worth it! Yummy comfort in a bowl!
Put your onion, garlic, celery, carrots, seasonings, broth and chicken in a 6 quart slow cooker and stir until well combined.
Cover and cook on low for 3 to 4 hours or high for 1.5-2 hours.
Mix together your water and cornstarch in a cup or small bowl until completely combined.
If your crock pot is not already on high, turn it on high and add cornstarch mixture and milk to your crock pot and stir until well combined.
Cover and cook for an additional 30 minutes.
Stir in gnocchi and chopped spinach, cover and cook on high for additional 15 minutes until gnocchi is cooked and spinach is wilted.
