Mix together all your ingredients except the optional garnish in a 6 quart slow cooker until well combined, keeping the cubed Velveeta from touching the insert if possible.
Cover and cook on low for 6-8 hours or high for 3-4 hours stirring occasionally.
Serve with optional shredded cheddar cheese garnish if desired.
