Sprinkle chicken thighs with lemon pepper seasoning on both sides.
Brown chicken on both sides in skillet (or browning slow cooker) in bacon grease over medium heat.
Transfer to 4 quart crock pot.
Mix remaining ingredients, except optional bacon, in a small bowl and pour on top of roast and cook on low 2-3 hours or till fall apart tender.
If desired, sprinkle with the bacon bits (if you fried 3-4 pieces) before serving, I just use the grease I saved to brown my chicken.
