Place your quartered strawberries, orange juice and sugar in a 5-6 quart slow cooker (I used my 6 Quart Crock Pot with Ceramic Coated Pot) and stir gently until well combined
Cover and cook on high for 2 hours
Mix together your water and cornstarch
Pour this mixture into your crock pot and stir
Cover and cook on high for an additional 15-30 minutes, until the sauce starts to thicken
Uncover, as the sauce cools, it will thicken more
