I cut the recipe by half, as I have only myself to cook for. The scrambled eggs
turned out very tasty, and there was enough leftover for the next day or two.
I can see me making the full recipe to take to a family brunch, with cooked veg. or meat on the the side to be added by each individual.

We haven’t really ever had leftovers to reheat from this before, so we can’t say for sure. However, we have reheated them inside of our freezer burritos (https://www.recipesthatcrock.com/low-carb-breakfast-freezer-burritos/). We think that they could be reheated in the microwave or slow cooker. If you use the slow cooker, watch them closely, so they are only in the slow cooker until they are just heated through.

I got a three chamber (1.5 qt each) crock pot for Christmas. This is one of the first one’s I tried making after scaling it down to serving for two. I may never go back to cooking eggs on a stove again. This was great. I was curious how you reheat leftovers.

I was sceptical going in – CROCK POT scrambled eggs? Sounded like a contradiction in terms. But it was FANTASTIC! I think the shredded Mozzarella is the key – and Cris is right – NO SUBS for it! Makes A LOT! I cut the recipe in half for just my husband and me (using my 2.5 qt casserole crockpot), and it could have fed 2 more generously with only the 5 eggs I used! Which makes it perfect for a breakfast Potluck or for when you’re feeding the extended family and/or friends! The cherry on the top of the cake is that prep is an ABSOLUTE snap! My husband kept complimenting me on it!

Game changer recipe for me. I used half and half and my boyfriend went crazy for it. I used cheddar and it didn’t turn out oily. Absolutely delicious. He wants me to add veggies but I don’t know how/if that will change the texture? Thanks again.
