How to Make Low Carb Freezer Breakfast Burritos

I have always enjoyed breakfast burritos as and easy go-to recipe in the morning. And, truth be told, I have been making regular freezer breakfast burritos for years. I have also been making low carb breakfast burritos for a couple years now. However, it was only recently that I started freezing the low carb version to add that convenience back into my life.
And, I swear, my freezer will not go without them again! They are so easy to make AND so easy to grab when I need a quick breakfast. I’m even going to dedicate RV freezer space to them on our next trip. What an EASY way to keep my family fed on moving days.
Ingredients for Low Carb Breakfast Freezer Burritos
We use two of our favorite breakfast recipes to make these burritos a snap:
However, you can use any scrambled eggs and fry your bacon however you would like. You could also use breakfast sausage or low carb ham as instead of bacon.
Reheating Breakfast Freezer Burritos
To reheat your burrito, place it in the microwave still wrapped in the paper towel. Cook on high for 60-90 seconds, flip and cook for another 30-60 seconds. Cooking times will vary based on microwaves, tortillas used and how full the burritos are. Once heated through, allow to sit for a minute or two before handling. Then unwrap the paper towel and enjoy!

- These burritos are around 8 NET Carbs per burrito using the exact ingredients we used divided into 16 burritos. You can lower carb counts by spreading ingredients out to make more burritos.
- We use Carb Balance Tortillas to make these burritos low carb. You can use any low carb tortilla.
- Number of freezer burritos will vary based on how big your tortillas are and how full you fill them.
- Do NOT skip the paper towel step. Individually wrapping each burrito protects them during the freezing and reheating process.
- We like to use thick plain white paper towels to wrap our burritos.
- Reheating times will vary based on microwaves, tortillas used and how fullness of the burritos.
- Once heated through, allow to sit for a minute or two before handling. They will be HOT.

Low Carb Breakfast Freezer Burritos
Ingredients
- 1 batch Crock Pot Scrambled Eggs
- 1 lb Bacon Fried
- 2 cups Shredded Cheddar Cheese
- 14 low carb tortillas
- 14 Sheets of Thick White Paper Towels
Instructions
- Place a paper towel down on your counter.
- Place tortilla on top of paper towel.
- Layer cheese, egg and bacon on tortilla and wrap into a burrito.
- Wrap burrito in the paper towel and set aside until you have made and wrapped all burritos.
- Place burritos in a freezer bag, push out all air and seal. Freeze for up to a month.
To Reheat
- To reheat your burrito, place it in the microwave still wrapped in the paper towel.
- Cook on high for 60-90 seconds.
- Carefully flip the burrito and cook for another 30-60 seconds. Cooking times will vary based on microwaves, tortillas used and how full the burritos are.

I LOVE breakfast burritos, and this recipe is stupid easy. One thing, though, could you import your original breakfast burrito recipe here so we can add it to our recipe boxes? That would be so awesome!

Such an easy way to have a quick breakfast ready to grab in a hurry!! I might would add a little onion and green pepper (cooked in microwave before adding) to mine. Pinning it!!
