Crock Pot Beef and Noodles

Ingredients

  • 2 lb beef chuck roast
  • 4 cups beef broth
  • 1 cup onion chopped (or ΒΌ cup dried minced onion)
  • 2 teaspoons onion powder
  • 1 Tablespoon dried parsley
  • salt & pepper to taste
  • extra-wide egg noodles prepared
  • mashed potatoes

Instructions

  • Put your roast in the bottom of your slow cooker.
  • Mix together your broth, onion and seasonings.
  • Pour broth mixture over your roast.
  • Cover and cook on low for 6-8 hours.
  • Make a bed of mashed potatoes topped with extra-wide egg noodles.
  • Place a serving of beef on top of the mashed potatoes and egg noodles.
  • Ladle juice top and serve.
