Crock Pot Balsamic Roast

Crock Pot Balsamic Roast is an easy recipe for beef roast that packs a flavorful punch. This is such a great slow cooker recipe that no one would ever guess was low carb too!

Ingredients

  • 2 Tablespoons Bacon Fat or other oil
  • 3 lb Chuck Roast
  • Salt and Pepper to Taste
  • 1 Tablespoon Minced Garlic
  • 1 Tablespoon Minced Dry Onion
  • 1 Tablespoon of Sugar or Sugar Substitute
  • 1/2 Cup Balsamic Vinegar
  • 1 Cup Beef Broth
  • Fresh Rosemary and Thyme to Taste

Instructions

  • Salt and pepper your roast and then brown on each side in the bacon fat on the saute feature OR if your slow cooker doesn't have a saute feature, just brown in a skillet on the stove before transferring to your traditional 6 quart slow cooker.
  • In a bowl, mix together garlic, onion, sugar, vinegar and broth.
  • Pour mixture over your roast and top with the herbs.
  • Cook on low for 8-10 hours.
  • Remove herbs and serve roast with sauce.

Notes

  • We love using a multi-cooker to make this roast to make it a one-pot dish, however, you can use a traditional 6 quart slow cooker and just brown your roast in a skillet on the stove if you do not have a multi-cooker.
  • This recipe was inspired by a recipe in one of my very favorite low carb cookbooks.
  • If you are counting carbs, make sure to compare labels on your balsamic vinegar. Carb counts vary wildly.
