Crock Pot Balsamic Roast is an easy recipe for beef roast that packs a flavorful punch. This is such a great slow cooker recipe that no one would ever guess was low carb too!

We love pot roast around here. It is Mikey’s favorite dish. So when we aren’t having Mississippi Roast (or the creamy version), we are having Dilly Roast or my Mom’s famous roast. So when I saw a Balsamic Roast in one of my favorite low carb cookbooks: Easy Ketogenic Diet Slow Cooking, I was totally inspired to make it my own and add it to our rotation. The flavors in this roast are SO different from our other roasts– it was the perfect addition.
How to Make Crock Pot Balsamic Roast
You will never believe how easy this “fancy” roast is to make! You just salt and pepper your roast and then brown on each side in the bacon fat on the saute feature ( in a multi-cooker ) OR if your slow cooker doesn’t have a saute feature, just brown in a skillet on the stove before transferring to your traditional slow cooker. In a bowl, mix together garlic, onion, sugar, vinegar and broth. Pour over your roast and top with the herbs. Cook on low for 8-10 hours. Remove herbs and serve with sauce.
Notes on Crock Pot Balsamic Roast
- We love using a multi-cooker to make this roast to make it a one-pot dish, however, you can use a traditional 6 quart slow cooker and just brown your roast in a skillet on the stove if you do not have a multi-cooker.
- This recipe was inspired by a recipe in one of my very favorite low carb cookbooks.
- If you are counting carbs, make sure to compare labels on your balsamic vinegar. Carb counts vary wildly.
- As with any of our recipes, calorie counts and nutritional information varies greatly depending on which products you choose to use when cooking this dish.

Crock Pot Balsamic Roast
Ingredients
- 2 Tablespoons Bacon Fat or other oil
- 3 lb Chuck Roast
- Salt and Pepper to Taste
- 1 Tablespoon Minced Garlic
- 1 Tablespoon Minced Dry Onion
- 1 Tablespoon of Sugar or Sugar Substitute
- 1/2 Cup Balsamic Vinegar
- 1 Cup Beef Broth
- Fresh Rosemary and Thyme to Taste
Instructions
- Salt and pepper your roast and then brown on each side in the bacon fat on the saute feature OR if your slow cooker doesn't have a saute feature, just brown in a skillet on the stove before transferring to your traditional 6 quart slow cooker.
- In a bowl, mix together garlic, onion, sugar, vinegar and broth.
- Pour mixture over your roast and top with the herbs.
- Cook on low for 8-10 hours.
- Remove herbs and serve roast with sauce.

This roast sounds wonderful. I was just wondering if it is really necessary to brown the roast first.
Browning builds flavor, but if I was in a hurry, I would not hesitate to just skip that step. This is controversial advice online- ha! Some folks always brown while others never do. We try to show both methods by sharing a variety of recipes with and without the step. Enjoy!
Could this be cooked in the Instant Pot and if so, how long would you suggest for the cook time. I have tried so many of your low carb recipes and have not found one that I didn’t like yet!!!

Hi Kris! Love your family adventures! Was wondering if I could add some new potatoes and vegetables to this recipe and if so at what point do you suggest putting them in? Thanks!
Hi Chris! You sure could. I typically like my vegetables to cook with the roast the entire time, but I like my veggies soft. If you want them firmer, you might throw them in when the roast has 4-5 hours to cook. Hope that helps!
