Do you ever have one of those moments of “why didn’t I think of that”? The other day one of our wonderful YouTube viewers (shout out to the Crock Posse community) shared with us that she had created an accidental new Mississippi-style recipe when she misread the butter from the recipe and used cream cheese instead! Her family loved it so much, that is how she makes it from now on! I was immediately intrigued and went right out and tried it.
Folks, we have a winner. It was down right delicious and the cream cheese made a wonderful thickener for the gravy!

How to Make Crock Pot Creamy Mississippi Beef Low Carb
While not everyone is comfortable using pre-made packets in their low carb diet, we enjoy Creamy Mississippi Beef in our low carb menu from time to time by substituting the traditional ranch packet for a dill ranch packet or chive and onion packet. Both reduce the carb counts for the entire recipe by 16 carbs. Additionally we make sure to use AuJus Gravy packets instead of higher carb gravy packets– this typically makes the carb count at least 1/4 of what it would be.
You can find these packets in almost any grocery store in the salad dressing aisle and gravy/sauces aisle. We also have them in our Amazon Recommendations under Low Carb Kitchen Favorites.
Like we always say on the blog, carb counts are ALWAYS going to be dependent on the exact ingredients you use– not the recipe itself.
Shopping List for Crock Pot Creamy Mississippi Beef
- 3-5lb Chuck Roast
- 1 envelope AuJus Gravy Mix
- 1 envelope Ranch Dressing Mix (We really like the dill flavored ranch mix in this recipe)
- 6-8 Pepperoncinis
- 1/2 Cup Pepperoncini Juice– Optional
- 8 oz Cream Cheese – Cubed
Notes on Crock Pot Creamy Mississippi Beef Recipe
- If you like spice, add the juice, if you aren’t a fan of spice, don’t add the juice. No additional liquid is needed, the roast will make its own juices.

Crock Pot Creamy Mississippi Beef
Ingredients
- 4 lb Chuck Roast
- 1 envelope AuJus Gravy Mix
- 1 oz envelope Ranch Dressing Mix We really like the dill flavored ranch mix in this recipe
- 7 Pepperoncinis
- 1/2 Cup Pepperoncini Juice optional
- 8 oz Cream Cheese cubed
Instructions
- Place roast in the bottom of a 6 quart slow cooker.
- Sprinkle gravy and ranch mixes on top.
- Place pepperoncinis around roast.
- If desired, pour juice around outside as well.
- Cook on low for 8 hours.
- Shred beef with two forks or in a stand mixer and return to juices.
- Stir in cream cheese until melted.
- Serve on buns, over mashed potatoes or on its own.
