Trim your chicken and place it in the bottom of a 2.5 quart or 4 quart slow cooker.
In a bowl, mix together the rest of your ingredients, except your prepared rice, and pour over chicken.
Cover and cook on low for 2 hours and 20 minutes to 3 hours on low or 1 hour and 10 minutes to 1.5 hours on high, turning your insert halfway through cooking if your slow cooker does not cook evenly.
Serve chicken over a bed of rice with the cooking juices spooned over top of everything.
