In a bowl, mix together your cooked chicken cubes, salsa, olives, cumin and 1 cup of cheese.
Lay your first tortilla in the bottom of a lightly greased 9 inch pie pan.
Spoon half of your chicken mixture on top of your first tortilla.
Top with a tortilla and repeat the layers with remaining chicken and tortilla.
Sprinkle remaining cheese on top.
Bake for 17-20 minutes, until your cheese has reached desired browning. (If your oven doesn't cook evenly, turn your pie pan halfway through cooking time.)
Cut into pieces like a pie and served with sour cream and sliced green onions, if desired.
