Place pork loin in 4 quart slow cooker fat side down.
Combine apple juice, sugar, soy sauce, vinegar, ginger and garlic powder in a small bowl and pour over pork loin.
Turn pork loin to coat all side ending with the fat-side up.
Cover and cook on low 2-3 hours, rotating your insert halfway through cooking if your slow cooker does not cook evenly, until the internal temperature reaches at least 145 degrees Fahrenheit.
Remove pork loin and keep warm.
Put the sauce from your slow cooker in a small saucepan.
In a small bowl, combine cornstarch and cold water until smooth and add to saucepan.
Boil over high heat for 1-2 minutes or until sauce thickens, stirring continually.
Slice pork loin and serve with sauce.
