How to Make Teriyaki Pork Loin for Two in a Crock Pot

If you are looking for a delicious recipe for pork loin, I highly recommend this Crock Pot Teriyaki Pork Loin for Two. Besides being a quick and easy recipe to throw together, the ingredients also come together to give you a really flavorful sauce that everyone in my house, even my picky eater, loved.
A couple of notes about this recipe. First of all, you won’t usually find a pork loin that is only 3/4 to 1 lb in a store. What I do is pick out some recipes ahead of time. It can either be pork loin recipes or boneless pork chop recipes. Then I buy a pork loin to accommodate those recipes and cut the pork loin into the sizes/pieces I need and freeze what I am not going to use immediately. Secondly, if you have ever thickened a sauce with a corn starch slurry, you may think my timing is a bit short. However, the ingredients in this particular sauce thicken up extremely quickly. This also means that you definitely want to stir it continually once you start heating it up on the stove.

What You Will Need for Crock Pot Teriyaki Pork Loin for Two
Ingredients Needed
- 3/4 to 1 lb pork loin
- 1/4 cup apple juice
- 1 1/2 teaspoon sugar
- 1 1/2 teaspoon soy sauce
- 3/4 teaspoon white vinegar
- 1/4 teaspoon ground ginger
- 1/4 teaspoon garlic powder
- 1 tablespoon corn starch
- 1 tablespoon water
Equipment Needed
- Sharp knife and cutting board (You will need this if your pork loin is bigger than what you need for this recipe.)
- Measuring cup
- Measuring spoons
- Small bowl
- Small whisk or fork
- 4 quart slow cooker
- Small bowl or coffee cup
- Fork
- Small saucepan
- Stirring spatula
Time Needed
- Prep Time: 5 minutes
- Cooking Time: 2 to 3 hours on low, rotating your insert halfway through cooking if your slow cooker does not cook evenly, until the internal temperature reaches at least 145 degrees Fahrenheit

Crock Pot Teriyaki Pork Loin for Two
Ingredients
- 3/4 lb Boneless Pork Loin (or 1 lb if you want larger servings)
- 1/4 cup Apple Juice
- 1 1/2 teaspoons Sugar
- 1 1/2 teaspoons Soy Sauce
- 3/4 teaspoon Vinegar
- 1/4 teaspoon Ground Ginger
- 1/4 teaspoon Garlic Powder
- 1 Tablespoon corn starch
- 1 Tablespoon Cold Water
Instructions
- Place pork loin in 4 quart slow cooker fat side down.
- Combine apple juice, sugar, soy sauce, vinegar, ginger and garlic powder in a small bowl and pour over pork loin.
- Turn pork loin to coat all side ending with the fat-side up.
- Cover and cook on low 2-3 hours, rotating your insert halfway through cooking if your slow cooker does not cook evenly, until the internal temperature reaches at least 145 degrees Fahrenheit.
- Remove pork loin and keep warm.
- Put the sauce from your slow cooker in a small saucepan.
- In a small bowl, combine cornstarch and cold water until smooth and add to saucepan.
- Boil over high heat for 1-2 minutes or until sauce thickens, stirring continually.
- Slice pork loin and serve with sauce.
