How to Make Brown Sugar Bacon Pork Chops in a Crock Pot

Michael and I were talking the other day about what we wanted to make for dinner in the next few days. When he told me I should wrap pork chops in bacon and cover them with brown sugar, I knew he had just had a brilliant idea that I couldn’t wait to share with you!
This Brown Sugar Bacon Crock Pot Pork Chops recipe only has 3 ingredients. So, it is super simple to prep and with those 3 ingredients, you get a wonderful flavor without a ton of work. Win win! You don’t have to do the final step of broiling, but we really enjoyed the way the way the cooking juices spooned over top of the bacon wrapped chops caramelized a bit and the bacon edges crisped up. It is totally up to your preferences whether you do that or not. We loved it that way. Whichever way you choose, I hope you enjoy it as much as my family and I do!
What You Will Need
Ingredients Needed
- 6 boneless pork chops
- 12 oz bacon
- 1/2 cup brown sugar
Equipment Needed
- Measuring cup
- Casserole Crock Pot
- Optional: Baking sheet, parchment paper, tongs or flipper spatula, spoon
Time Needed
- Prep Time: 5 minutes
- Cooking Time: 3 to 4 hours on low or 1.5 to 2 hours on high, turning insert halfway through cooking if your slow cooker does not cook evenly
- Optional Additional Cooking Time: 1 to 3 minutes in the broiler on high

Brown Sugar Bacon Crock Pot Pork Chops
Ingredients
- 6 boneless pork chops (The total weight of mine was around 1.5 lbs.)
- 12 oz bacon
- 1/2 cup brown sugar
Instructions
- Wrap 2 to 3 pieces of bacon around each pork chop. (How many pieces per chop will depend on how many pieces of bacon are in your pack.)
- Place bacon wrapped chops in a casserole crock pot.
- Sprinkle brown sugar evenly over the top of your pork chops.
- Cover and cook on low for 3-4 hours or high for 1.5-2 hours. (Turn your insert halfway through cooking if your slow cooker does not cook evenly.)
- If desired, place pork chops on a baking sheet covered with parchment paper and spoon some of the cooking liquid over your chops. Broil on high for 1-3 minutes until your bacon reaches your preferred amount of browning. (Do NOT walk away while using your broiler. Watch it continually.)
