How to Make Taco Shells and Cheese in a Crock Pot

I made this Crock Pot Taco Mac Casserole a while back to rave reviews from my family. Our readers seemed to love it too, but made some alterations. As Cris and I were talking over new recipe ideas, she brought the idea of using shells instead of macaroni. So I thought I would use the taco mac casserole as a base recipe and make some alterations. The result is this amazing Crock Pot Taco Shells and Cheese recipe that I hope you love as much as we do!
I made this and served it up to the family at Camp Lou-da-Cris. It was a huge hit. Mikey said, “Lou! This is amazing!” Everyone else around the campfire agreed. The creaminess of the cheese sauce went well with the pasta, taco flavoring and ground beef. This can be a hearty side or main dish depending on the size of portions that are served up.
What You Will Need
Ingredients Needed
- 1.5 lbs ground beef, browned and drained
- 3 cups uncooked pasta shells, cooked al dente and drained
- 2 oz taco seasoning (2 – 1 oz packets)
- 12 oz can evaporated milk
- 16 oz block Velveeta, cubed (You can also use half of a 32 oz block.)
- 1/4 cup butter, sliced into thin pats
Equipment Needed
- Skillet and strainer or micro cooker
- Measuring cup
- Medium pot and strainer
- Can opener
- Scissors (These are only needed if you need help opening packets like I do.)
- Cutting board
- Knife
- Stirring spoon or stirring spatula
- 6 quart crock pot
Time Needed
- Prep Time: 15 minutes
- Cooking Time: 2 to 3 hours on low or 1 to 1.5 hours on high, stirring occasionally

Crock Pot Taco Shells and Cheese
Ingredients
- 1.5 lbs ground beef browned and drained
- 3 cups uncooked pasta shells cooked al dente and drained
- 2 oz taco seasoning (2 – 1 oz packets)
- 12 oz can evaporated milk
- 16 oz Velveeta cubed
- 1/4 cup butter sliced into thin pats
Instructions
- Mix all your ingredients together in a lightly greased 6-quart slow cooker.
- Cover and cook on low for 2-3 hours or high for 1-1.5 hours, stirring occasionally.
