Cris and I were talking the other day about different ways to convert some of our recipes to for two recipes. She asked me about using canned meat to help with cost and to keep people from having to figure out something to do with the rest of the meat in a package. So, I thought I would give it a try with this Saucy Crock Pot Chicken and Rice for Two. The results were delicious!

What You Will Need for Saucy Crock Pot Chicken and Rice for Two

Ingredients Needed

  • 12.5 oz can chunk chicken breasts, drained
  • 2 tablespoons butter, divided
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon ground black pepper
  • 1/4 teaspoon parsley flakes
  • 1/4 teaspoon dried cilantro leaves
  • 1/16 teaspoon ground red pepper (If you do not have a 1/16 teaspoon measuring spoon, you can just use half of a 1/8 teaspoon or a tiny pinch.)
  • 1/3 cup heavy whipping cream
  • 1/3 cup whipped cream cheese
  • 1/2 cup uncooked basmati rice, prepared

Time Needed

  • Prep Time: 10 minutes
  • Cooking Time: 2 hours on low or 1 hour on high, stirring halfway through the cooking time to make sure everything heats evenly

    Ingredients

    • 12 oz can chicken drained
    • 1 1/2 teaspoons butter
    • 4 1/2 teaspoons butter
    • 3/4 teaspoon garlic powder
    • 1/2 teaspoons garlic salt
    • 1/4 teaspoon onion powder
    • 1/4 teaspoon parsley flakes
    • 1/4 teaspoon dried cilantro leaves
    • 1/8 teaspoon pepper
    • 1/16 teaspoon ground red pepper
    • 1/4 cup heavy whipping cream
    • 1/3 cups Shredded Parmesan
    • 1/3 cup whipped cream cheese
    • 1/2 cup uncooked basmati rice prepared

    Instructions

    • Melt 1 1/2 teaspoons butter in a skillet over medium/high heat.
    • Break apart and large pieces of a 12 oz can chicken (drained) in the skillet and brown in the melted butter for about 5-6 minutes.
    • Place browned chicken in a heat safe bowl that will fit in a 4 quart slow cooker with the lid on, pouring the remaining butter/cooking juices over top.
    • Using a mixer, combine 4 1/2 teaspoons butter, 3/4 teaspoon garlic powder, 1/2 teaspoons garlic salt, 1/4 teaspoon onion powder, 1/4 teaspoon parsley flakes1/4 teaspoon dried cilantro leaves, 1/8 teaspoon pepper, 1/16 teaspoon ground red pepper, 1/4 cup heavy whipping cream, 1/3 cups Shredded Parmesan1/3 cup whipped cream cheese and spoon over the top of browned chicken.
    • Pour hot water in the insert until it is about an inch deep and place the bowl with the ingredients on top of the water.
    • Cover and cook on low for 2 hours or high for 1 hour, stirring halfway through the cooking time, or sooner if your unit cooks hot.
    • About a half hour before serving, stir in 1/2 cup uncooked basmati rice (prepared).
