How to Make Angel Chicken for Two in a Crock Pot

Angel chicken is a long time favorite around here and with our readers. I thought it was the perfect recipe to convert to a “for two” recipe. This flavorful and creamy dish needs to be available for everyone regardless of how many servings someone needs. It is that good!

You might notice that this version of the recipe has you shred the chicken while the original recipe does not. The reason for this is that the chicken thighs in my pack were not the same size, so I shredded them to make sure the serving sizes could be the same. If your chicken thighs are closer to the same size and you prefer to not have shredded chicken, you can skip the shredding step.

What You Will Need for Crock Pot Angel Chicken for Two

Ingredients Needed

  • 1/2 lb boneless, skinless chicken thighs (or boneless, skinless chicken breasts cut into thigh size pieces), trimmed
  • 1 1/2 tablespoons butter, melted
  • 3 tablespoons cooking sherry or chicken broth
  • 1/3 cup chive and onion cream cheese
  • 1/2 cup cream of mushroom soup
  • 2 teaspoon Italian dressing mix
  • Angel hair pasta, cooked

Time Needed

  • Prep Time: 10 minutes (or less)
  • Cooking Time: 2 to 3 hours on low or 1 hour to 1 hour and 30 minutes, stirring halfway through cooking time, if possible

    Ingredients

    • 1/2 lb boneless skinless chicken thighs (or chicken breasts cut into thigh size pieces), trimmed
    • 1 1/2 tablespoons Butter melted
    • 3 tablespoon cooking sherry OR chicken broth
    • 1/3 cup Chive and Onion Cream Cheese softened
    • 1/2 cup cream of mushroom soup
    • 2 teaspoon Italian Dressing Mix
    • Cooked Angel Hair Pasta or Spaghetti

    Instructions

    • Place all ingredients-except chicken and pasta-in a mixer and mix on low for 2 minutes.
    • Place chicken in a 2.5 quart, 3 quart or 4 quart crock pot and slather mixture over the top.
    • Cook on low for 2-3 hours or on high for 1-1.5 hours, stirring halfway through cooking, if possible.
    • Take two forks and shred the chicken.
    • Stir chicken and sauce together.
    • Serve chicken and sauce over prepared angel hair pasta or spaghetti.
