How to Make Chicken Mac ‘n Cheese for Two in a Crock Pot

From the very first time I made this recipe, it was a family favorite. It takes mac ‘n cheese up a level with adding in some cubed chicken and gives me major comfort food vibes. Now the original recipe has 8 servings, so that is two meals for my family. I realize that not everyone needs quite as many servings, so I adjusted it to make this Chicken Crock Pot Mac ‘n Cheese for Two recipe. The original recipe already had a pretty quick cooking time, so I watched this one closely because I knew it would cook up fast. Another thing I notice is that all of my smaller slow cooker (one 2.5 quart slow cooker and two 4 quart slow cookers) tend to cook hotter. So, if your units are like mine, be sure and watch it closely.

What You Will Need Chicken Crock Pot Mac ‘n Cheese for Two

Ingredients Needed

  • 1/2 cup uncooked macaroni, cooked al dente and drained
  • 2 boneless, skinless chicken thighs, cut into cubes and cooked
  • 1 clove garlic, minced
  • 1/2 cup evaporated milk
  • 1/3 cup milk
  • 4 oz Velveeta, cubed (1/4th of a 16 oz block or 1/8th of a 32 oz block)
  • 2 tablespoons butter, melted
  • Salt and pepper to taste

  • Cooking Time: 1 to 1.5 hours on low or 30 minutes to 45 minutes on high
  • Cooling Time: 10 – 15 minutes, stirring occasionally

  • Mix together all of your ingredients in a lightly greased 2.5 quart crock pot or 4 quart crock pot.
  • Cover and cook 1 to 1.5 hours on low or 30 minutes to 45 minutes on high, stirring occasionally.
  • Once the cheese sauce is smooth, remove insert and set on a heat-resistant surface for approximately 10-15 minutes, stirring occasionally (this gives the sauce time to thicken up).
