This Chicken Crock Pot Mac ‘n Cheese is super simple. Just put all your ingredients together and let the crock pot do its thing! If you want to make it even easier, you could try using chicken from a rotisserie chicken from the store! I am all for making getting dinner on the table as easy as possible!
When this recipe is cooking, it will look soupy. Do not worry! It will thicken up in the cooling time. The stirring during cooking will ensure the cubes of Velveeta do not stick to the side of your crock pot while they are melting. Stirring during the cooling time will help release the heat evenly so the sauce can thicken up. The stirring does not have to be tedious. Just give it a stir as you walk through the kitchen. You are going to love this creamy deliciousness!

What You Will Need
Ingredients Needed
- 2 lbs chicken, cubed and cooked
- 12 oz can evaporated milk
- 2 cups uncooked macaroni cooked al dente and drained
- 1 1/2 cups milk
- 2 cloves garlic minced
- 16 oz block Velveeta cubed
- 1/2 cup butter melted
- salt and pepper to taste
Equipment Needed
- Large Saucepan
- Colander or strainer (I love my on-pot strainer)
- Sharp knife
- Cutting board
- Garlic Press
- Glass cup (This is for melting your butter in the microwave. A coffee cup or measuring cup will work.)
- Measuring Cup
- Can opener
- 6 quart slow cooker
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 1.5 to 2 hours, stirring occasionally
- Cooling Time: 30 minutes, stirring occasionally

Ingredients
- 2 cups uncooked macaroni cooked al dente and drained
- 2 lbs boneless, skinless chicken cubed and cooked
- 2 cloves garlic minced
- 12 oz can evaporated milk
- 1 1/2 cups milk
- 16 oz block Velveeta cubed
- 1/2 cup butter melted
- Salt and Pepper to taste
Instructions
- Cover and cook on low for 1.5-2 hours, stirring occasionally
- Once the cheese sauce is smooth, remove insert and set on a heat-resistant surface for approximately 30 minutes, stirring occasionally (this gives the sauce time to thicken up)
