How to Make Cheesy Potatoes and Chicken in a Slow Cooker

I was thinking the other day what I could make from what I had in the cabinets. Then I remembered the Crock Pot Cheesy Potatoes and Smoked Sausage I made, and thought, “Hey! I could try that with chicken!” It worked out really well! I added in a bit more milk so you don’t have to pre-cook the potatoes, so it is a thinner sauce than the original recipe I adapted this from, but it is so yummy!

Crock Pot Cheesy Potatoes and Chicken
Ingredients
- 8 potatoes peeled and cut into small cubes
- 1 onion diced
- 16 oz Velveeta cubed
- 1.5 lb boneless, skinless chicken cut into large cubes
- salt and pepper to taste
- 2 cup milk
Instructions
- Put all your ingredients in your 6-quart slow cooker with the potatoes on bottom
- Cover and cook on low for 4-6 hours or high for 2-3 hours, stirring occasionally.

This is a great base recipe. I changed some things based off of previous comments. I cannot stress seasoning enough. I liberally added garlic salt with parsley, garlic powder, onion powder and seasoned the potatoes onion and chicken in the crockpot. Stirred. Added 1 can Cream of Chicken and apox 1/4 cup of milk. I let that cook on low for about 4 hrs and then added 12 oz Velveeta in the last hour of cooking. Served with green onions on top.
I know it says 315kcal for this recipe, is that per serving? as in 315000 calories?? I’d love to try this but my husband is counting calories and I want to be sure to have a proper number.
Here is an explanation of kcals I found online: The calorie content is often given in kcals, which is short for kilocalories, and also in kJ, which is short for kilojoules. A kilocalorie is another word for what’s commonly called a calorie, so 1,000 calories will be written as 1,000kcals. Kilojoules are the metric measurement of calories. Hope this helps clear it up.
I’m gonna make this soon, but wondering if you could add another vege like maybe broccoli.

I love y’all’s recipes, but I so often come into the issue of the “cheese” almost always being Velveeta. No one in our house likes it or will eat it (we’re a family of 10). Would be thrilled to have a real cheese estimate included with your recipes. Thanks!

We use a variety of cheeses on the large library of recipes we have on the site. While you can always try substituting cheddar when you find Velveeta listed, it will almost always have a different consistency. Sometimes that will be no big deal, other times it will likely have more of an oily result that some find unappetizing. Unfortunately we don’t give recommendations for substitutions we haven’t tested first because we can’t know how it will turn out and we don’t want to mislead anyone.

I tried it not using velveeta but grated my own instead. I’m a good cook but this ended in the oven as even grated it was too heavy for the crockpot. I also had to adjust with some cream cheese and a cornstarch slurry to help bind it together.
How much salt and pepper do you add to this?

As a rule of thumb, I always start with a little and add more if needed. It depends on personal preference. My hubs LOVES pepper. I, on the other hand, am not a big fan. (He peppers his plate so heavily that I sneeze from across the table! lol) If you want a measurement, maybe 1/2 teaspoon to start of each. If it seems bland, add a dash of salt to your serving. Salt is meant to bring out the flavor of the other ingredients, not overpower them. Make sense?

Cheesy potatoes and chicken was easy to make. Why did my Velvetta cheese sauce look curdled? I did stir occasionally but never became cheese sauce. Probably won’t try again.

My husband id not a lover of chicken.so, by cutting it up, and getting in the crock pot, he won’t know what is all about, so it will be interesting. Will try to let you know the surprise goes.

No sure why, but mine was not smooth and creamy, it was really runny. I followed the recipe exactly, howerver, it tasted great.

So disappointed! This looked delicious, but it looks horrible! It’s not smooth and creamy at all. I’m assuming because of the potatoes.

We always make things in the crock pot first (if it can be made in a crock pot), then the instant pot. I really loved this recipe, so I suspect I’ll be giving a try in the instant pot soon! However, I don’t want to give recommendations without actually trying it. We sometimes have to make a recipe a few times to make the adjustments needed to give our readers the best chance at success. I’ll get this one on my list to try in the instant pot and post the link back here when I get it up on here.

I’m confused. At the top of the recipe, it says total cook time is four hours. In the recipe, it says coupon high to three hours. So which is it? I really want to make this, but I’m confused.
That was supposed to read, “Cook on high 2-3 hours.” Sorry.
