When we shared our Crock Pot Cheesy Sausage Dip the other day, a reader shared they enjoy adding a couple things to the recipe to make it even better and creamier. So we gave it a try and loved it!
Low Carb Queso Taco Salad Option
We also turned it into a delicious low carb Queso Taco Salad to enjoy as a part of our regular low carb menu.
All you have to do is make a traditional taco salad with your favorite taco meat and toppings: lettuce, tomato, sour cream, guac and/or taco sauce and then use the dip instead of shredded cheese as a yummy cheese sauce!

Notes on Crock Pot Creamy Sausage Cheese Dip
- We like to use our browning slow cookers to make this recipe because you can brown the sausage in the same pot that you use to slow cook AND the pots are non-stick which makes clean up a snap. However, you can make this dish in any 6 quart slow cooker and just brown your ground sausage in a skillet on the stove first.
- You can serve this as a dip at parties or as a topping for taco salad or taco bar.
- All slow cookers cook differently, so cooking times are always a basic guideline. Recipes should always be tested first in your own slow cooker and time adjusted as needed.

Crock Pot Creamy Sausage Cheese Dip
Ingredients
- 32 oz Block of Velveeta- Cubed
- 15 oz Jar Mild Chi-Chi’s Salsa
- 1 lb Sausage Browned and Drained
- 4 oz Cream Cheese soft (we microwave for 30 sec)
- 1/4 cup Heavy Cream (or milk)
Instructions
- Combine all ingredients in a slow cooker and cook on low for 2 -3 hours, stirring occasionally until smooth.
