It really does not get much easier than this Cheesy Crock Pot Potato Chicken Casserole recipe. I was in need of a quick and easy meal to make for the family. It was another crazy week day. I had a million and one things going on…and, oh yeah, the family wanted to be fed sometime soon. What to do?! I used what I had on hand. That is how this recipe came about, and it was a huge hit! The ingredients might sound a little funny together, but I promise you, they are super tasty together!
Better yet, it does not have a lot of measuring to do or anything like that. When I told Michael I did not put in any extra spices in it, his eyes grew about 3 sizes. lol He loves to add a little bit of this and a little bit of that to every recipe he makes, which is great! However, sometime you can pull off a flavorful meal without much tinkering. The seasonings on the hash brown patties do a great job of adding a delicious pop of flavor without any extra work from you!
What You Will Need
Ingredients Needed
- 2 lbs boneless, skinless chicken, cooked and cubed
- 7 hash brown patties, divided
- 10.5 oz can cream of mushroom soup
- 10.5 oz can cheddar cheese soup
Equipment Needed
- Medium bowl
- Spoon
- 4 quart slow cooker
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 1 hour to 90 minutes

Cheesy Crock Pot Chicken Potato Casserole
Ingredients
- 2 lbs boneless skinless chicken cooked and cubed
- 7 hash brown patties divided
- 10.5 oz can cream of chicken soup
- 10.5 oz Can Cheddar Cheese Soup
- Salt and Pepper to taste
Instructions
- Place 3 of your hash brown patties in the bottom of a 4 quart slow cooker
- Top with your cooked chicken cubes
- Place the remaining hash brown patties on top
- Mix your soups in a bowl and spread over the top of everything
- Cover and cook for 60-90 minutes on high
- Stir everything with a serving spoon and serve with salt and pepper to taste
